The health case for olive oil rests on two pillars. Opaque packaging: dark glass, tin or protective pouch, because a bright shelf can undo a great mill in weeks. Early harvest and cold extraction: the two production choices that create high phenol content in the first place — October fruit, milled within hours, below 27°C.

What does not belong in the answer

Several things people use as health proxies genuinely are not. Price alone: expensive bottles without certificates exist in abundance.
